Homemade Chicken Stir Fry

Mouthwatering flavours, juicy, saucy & spicy. Contains soya sauce, oyster sauce and egg noodles.

I love a good stir fry and this is my favourite way of making it at home. It's a quick meal to cook up for yourself and a few friends and family without working too hard. I have made this a few times for my Husband and my own family and they had been amazed by the flavours each and every time. I usually serve it with the optional fried egg and prawn crackers.
Before I started the My Light Snack Social Media accounts, I had filmed and posted this recipe on my personal TikTok account which was set on public, and people loved it. Several people had messaged me as well as personally telling me that they have tried and tested this recipe and it's now their new way of cooking a homemade stir fry. It makes me so happy to know that people trusted my video tutorial enough to recreate it in their home despite knowing the risk of doing that is, it might taste awful and they should've just ordered from their local takeaway instead. Aaah the relief.

I've always wanted to learn to cook but being born and raised in London, I didn't have the sense of urgency to start because of the countless numbers of amazing Restaurants and Takeaways anywhere and everywhere!
Since moving out of London to live by the countryside with my Husband, I was sad to not have found decent Chinese Takeaways or Restaurants that makes stir fries with the flavours I excitingly look forward to. So I took it upon myself to take lots of notes by watching a range of cooks on youtube making this dish as well as a reading different recipes online. Any tweaks and secrets these cooks used that I fell in love with; I tried to incorporate it when I eventually made the stir fry myself. Finally I cooked it. Before making my first stir fry, my Husband wasn't a fan of stir frys. Since making this stir fry at home, my Husband is now officially a fan and it's now something we eat often together.
Homemade Chicken Stir Fry - The Divine Details:
Ingredients
Egg Noodles
Light Soya Sauce
Dark Soya Sauce
Oyster Sauce
Honey
Mince Garlic
Mince Ginger
Mince Chillies
Sesame Oil (Can use other oils such as sunflower or vegetable)
Chicken thighs (or any cut)
Stir fry veg
Sesame Seeds (Optional)
How to prepare
Mince up a whole bulb of garlic, a small amount of ginger and chillies to preference, mix in a bowl and set aside. For maximum flavour, beat this mixture gently in a pestel and mortar to release extra flavour and fragrance.
Prepare your cut of chicken of choice. Any cut will work however the stir fry is extra juicy when chicken thighs are used.
In a bowl, marinate chicken in: Light and Dark Soya sauce, Osyter Sauce, Honey and two thirds of the mince garlic, ginger and chillies. Allow this to marinate for atleast one hour. But if your low on time or patience then you can skip the marinating part.
Place dry egg noodles in a bowl and have a kettle filled with water ready to boil on standby. This is the last part of the cooking but needs to be done quickly so having it prepared on the side is going to help you minimise rushing.
How to cook
Cook off the marinating chicken in sesame oil. Stir occasionally so the sauce doesn't stick to the bottom. Ideally cook about 90% way through and set aside.
When the chicken is almost done cooking, in a separate HOT pan, brown off the remaining mince garlic, ginger & chillies to release a powerful fragrance and flavour which will set the tone for your entire stir fry.
Then add chicken and stir fry veg and allow this to cook for 5 minutes. Don't forget to use all the sauce from the pan when transferring in your chicken. That sauce is treasure!
While this is cooking, boil that kettle of water and then soak your egg noodles in boiling water and oil for 5 minutes, to stop the noodles sticking together after you've drained them.
Drain the noodles and add into the stir fry pot. Mix. allow it to cook for a few more minutes before serving.
Serve with or without fried egg and prawn crackers or with any other sides of your choice.

Cooking this stir fry with Sesame oil isn't essential but I do strongly recommend it. It definitely enhances the entire flavour and smell of the dish. However it wouldn't be the end of the world if you cooked this stir fry with standard vegetable or sunflower oil.
